Ingredients (makes 12 slices)

Prep time: 20 minutes; Cooking time: 40 minutes

 

For the cake:

200g butter

200g caster sugar

4 eggs

35g dark chocolate

1 tbspn cocoa powder

Pink food dye

 

For the icing:

50g dark chocolate

50ml double cream

 

  • Preheat the oven to 170degC/338F/Gas mark 5 and line a 1lb loaf tin with baking paper
  • Cream together the butter and sugar. Gradually add the eggs one at a time, beating well between each one. Fold in the flour to make a smooth batter-type mixture
  • Divide the mixture evenly into three mixing bowls. Meanwhile, melt the chocolate for the sponge
  • Leave one-third of the cake mixture as it is, add a dash of pink food dye to the second and fold the cocoa and molten chocolate into the third bowl
  • Place oversized tablespoon dollops of each mixture along the length of the tin, then continue with a second and third layer until all the mixture is in the baking tin
  • Place in the oven to bake for around 40 minutes
  • To make the icing, place the chocolate in a mixing bowl. Bring the cream to the boil and gradually pour over the chocolate to melt it. Beat until smooth and pour over the top of the cake

 

Leah’s tip- Try the icing recipe as a sauce to serve over ice cream. Simply add an additional 30ml cream and pour over while nice and warm
